Shrimp/prawn and Sausage Skewers

Ingredients:

  • 1lb 16/20 raw jumbo shrimp/prawn (peel/deveined, with tail left on)
  • 7oz Andouille or Kielbasa (if you like mild) sausage link
  • 2 tsp extra virgin olive oil
  • 2tbsp Cajun seasoning of your choice
  • 1/3 cup mayonnaise
  • 1 tbsp lemon juice
  • 6-8 skewers

Directions:

Skewer directions:

  • Soak skewers in warm water for 30 mins
  • Remove shrimp head, peel and devein but leave tail on
  • Rinse and dry shrimp/prawn with a paper towel
  • Place the shrimp/prawn in a large bowl.  Mix in olive oil and 1 tbsp Cajun seasoning
  • Slice sausage the same width as the shrimp
  • Place sausage between the curve of the shrimp/prawn and skewer

Dipping sauce directions:

  • Mix mayonnaise, the Cajun seasoning that was not used in the making of the skewer, and lemon juice in a small bowl

Grilling directions:

  • Turn Grill on high heat for 10 mins, then turn it down to medium-high heat
  • Spray skewers with nonstick spray
  • Place skewers on grill for 1-2 mins each side (shrimp/prawn should be opaque and cooked through)
  • Place on serving dish with dipping sauce
