Ingredients:
- 1lb 16/20 raw jumbo shrimp/prawn (peel/deveined, with tail left on)
- 7oz Andouille or Kielbasa (if you like mild) sausage link
- 2 tsp extra virgin olive oil
- 2tbsp Cajun seasoning of your choice
- 1/3 cup mayonnaise
- 1 tbsp lemon juice
- 6-8 skewers

Skewer directions:
- Soak skewers in warm water for 30 mins
- Remove shrimp head, peel and devein but leave tail on
- Rinse and dry shrimp/prawn with a paper towel
- Place the shrimp/prawn in a large bowl. Mix in olive oil and 1 tbsp Cajun seasoning
- Slice sausage the same width as the shrimp
- Place sausage between the curve of the shrimp/prawn and skewer

- Mix mayonnaise, the Cajun seasoning that was not used in the making of the skewer, and lemon juice in a small bowl
Grilling directions:
- Turn Grill on high heat for 10 mins, then turn it down to medium-high heat
- Spray skewers with nonstick spray
- Place skewers on grill for 1-2 mins each side (shrimp/prawn should be opaque and cooked through)
- Place on serving dish with dipping sauce
