For Assembly:
- 12 lasagna noodles, cooked
- 2 cups ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Ingredients:
For the Shrimp Scampi:
- 1 pound large shrimp/prawn, peeled and deveined
- 4 tbsp butter
- 4 garlic cloves - minced
- 1/2 cup chicken or seafood broth
- 2 tbsp lemon juice
- 1/4 cup fresh chopped parsley
- Salt and pepper to taste
For the White Sauce:
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 4 cups milk
- 1 cup grated Parmesan cheese
- 1/2 tsp ground nutmeg
- Salt and pepper to taste
Directions:
Preheat Oven: Set oven to 375°F (190°C)
Shrimp Scampi:
- Sauté minced garlic in butter until fragrant, add shrimp/prawn, and cook until pink
- Stir in chicken or seafood broth, lemon juice, parsley, salt, and pepper. Then set aside
White Sauce:
- In a separate pan, melt butter, stir in flour, and cook briefly
- Gradually whisk in milk and simmer until thickened
- Once thick, add parmesan, nutmeg, salt, and pepper
Ricotta Mixture:
- In a bowl, mix ricotta cheese with the egg until smooth
Assemble Lasagna:
- Layer white sauce, lasagna noodles, ricotta mixture, shrimp, and repeat
- Finish with shredded mozzarella on top
Bake:
- Cook in oven for 25-30 mins until golden and bubbly
- Let cool slightly, garnish with parsley
