Shrimp/Prawn Scampi Lasagna

For Assembly:

  • 12 lasagna noodles, cooked
  • 2 cups ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Ingredients:

For the Shrimp Scampi:

  • 1 pound large shrimp/prawn, peeled and deveined
  • 4 tbsp butter
  • 4 garlic cloves - minced
  • 1/2 cup chicken or seafood broth
  • 2 tbsp lemon juice
  • 1/4 cup fresh chopped parsley
  • Salt and pepper to taste

 

For the White Sauce:

  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 4 cups milk
  • 1 cup grated Parmesan cheese
  • 1/2 tsp ground nutmeg
  • Salt and pepper to taste

Directions:

Preheat Oven: Set oven to 375°F (190°C)

Shrimp Scampi:

  • Sauté minced garlic in butter until fragrant, add shrimp/prawn, and cook until pink
  • Stir in chicken or seafood broth, lemon juice, parsley, salt, and pepper.  Then set aside

White Sauce:

  • In a separate pan, melt butter, stir in flour, and cook briefly
  • Gradually whisk in milk and simmer until thickened
  • Once thick, add parmesan, nutmeg, salt, and pepper

Ricotta Mixture:

  • In a bowl, mix ricotta cheese with the egg until smooth

Assemble Lasagna:

  • Layer white sauce, lasagna noodles, ricotta mixture, shrimp, and repeat
  • Finish with shredded mozzarella on top

Bake:

  • Cook in oven for 25-30 mins until golden and bubbly
  • Let cool slightly, garnish with parsley
