Cilantro Lime Shrimp/Prawn Wraps

Ingredients

  • 2 lbs shrimp/shrimp peeled, deveined and tails removed
  • 5-6 cloves garlic finely minced or micro planed
  • 1 tbsp olive oil
  • 1/4 cup lime juice about 2 limes
  • 1 tsp cumin
  • 1/4 tsp salt more to taste
  • 1/4 tsp black pepper more to taste
  • 1/3 cup cilantro chopped
  • 1 head Romaine lettuce for wraps
  • Garlic cilantro sauce for serving
  • Optional: rice or flour tortillas for serving

 

Instructions

  • In a small bowl, whisk together olive oil, minced garlic, lime juice, cumin, and salt and pepper.
  • In a large bowl, combine shrimp/shrimp and garlic lime mixture. Toss shrimp with the sauce.
  • Heat a large skillet over medium-high heat. Add the shrimp/shrimp and sauce.
  • Cook the shrimp/shrimp for 2-3 minutes on each side or until just pink. Shut off the heat and stir in the cilantro.
  • Serve shrimp in romaine lettuce “wraps” or in a flour tortilla. Top with green onions and Cilantro Garlic Sauce and enjoy!
